Lemon Sugar Cookies: What to Do When Life Hands You Lemons

When life hands you lemons, make sugar cookies. 
Today really was feeling like a "lemon" day to me.
You know the kind, that leaves a bitter taste in your mouth?
Treats always make it better.
So enjoy this one, its for you fellow lemon-lovers.
& if your like me, the cookie lovers. (here is another cookie recipe of mine)

Lemon Sugar Cookies
 Makes about 4 dozen

  • 1 cup butter, softened
  • 1¾ cup sugar (I used half sugar, half Splenda)
  • 1 egg
  • 1 tsp. vanilla
  • juice of 1 lemon (about 3-4 T.)
  • 1 tsp. baking soda
  • ½ tsp. baking powder
  • ½ tsp. salt ( allllways cook with course sea salt- I love the contrast to the sweet flavor)
  • 3 cups flour
  1. Cream butter and sugar. Add egg and vanilla and mix well.
  2. Add lemon juice, salt, soda, and baking powder and mix well.
  3. Add flour and mix until combined. Dough should be thick and crumbly.
  4. Drop spoonfuls onto a baking sheet and bake at 350 degrees for 8-10 minutes.

    1. they are pretty good! I even made mine with half of the sugar Splenda... worked perfectly!
